Recipes

I accidentally posted two of these in one day a couple days ago (you guys all probably noticed) so my days were off. Yay Day 10 is already done for today!
"A favorite food and recipe"

Ironically, I just made one of my favorite dishes last night because Ben was getting home from a 3-day business trip and I wanted something good to be on the table (besides the regular mac & cheese or pizza... just kidding. I'm not that bad).

It's my go-to recipe when I want something that tastes gourmet but is still easy to make. LOVE it. They have the BEST flavor. The ingredients aren't ones you'd have around the house, so once you make one trip to the store to get them, you can make it a good 10 times before you need to go get anything new.

Meatballs
1 lb hamburger
1/4 c. soy sauce
1/4 c. water
1/4 tsp garlic powder
1/2 tsp sugar
3/4 tsp ground ginger
1 egg
1/4 c. bread crumbs
1/4 c. grated onion

Mix above ingredients into walnut size meatballs and place on cookie sheet. Bake 10-12 minutes @ 375.

Sauce:
2 c. brown sugar
1/4 c. apple vinegar
1/2 c. pineapple juice
2 Tbls corn starch
1/2 c. water
2 Tbls lemon juice
1/4 c. butter

Bring to a boil. Cook until thickened. Poor meatballs in sauce. Could be served over rice. Yield 30 meatballs. 
 
My second favorite is Taco Bake because it's even easier.

Taco Bake
1 lb. ground beef
1/2-3/4 pkg taco seasoning
1 14.5 oz tomato sauce
1 c. salsa
1/2 c. milk
1/2 c. water
1 c. shredded cheddar cheese
6 flour tortillas cut into 1" pieces

Cook beef in skillet, add taco seasoning. Add sauce, salsa, milk, water, tortilla pieces, and half the cheese. Spoon into 2 qt. baking dish. Cook uncovered for 30 minutes at 400 degrees. Sprinkle remaining cheese and serve.
